A technical alchemy replaces the water of the fruit with a sugar syrup. This is called confiding. From successive broths for 3 to 4 weeks, an osmosis is created between the flesh of the fruit and this gourmet nectar. The fruit is then left in a fruit tree for at least two months to perfect the "confisage". The final finishing bath, the icing, giving it a shiny appearance and, to the touch, the feeling of a fruit that has just been picked.
